Gingerbread Waffles

We are breakfast people.  Neither one of us can make it very far into our day without it.  Most of the time, we are rushing around to get ready for our day, and we end up eating cereal or eggs.  On weekends, however, we really enjoy making large breakfasts.  We often end up making waffles, and we like to play with the recipe a bit and see what we can do to spice it up.  This weekend, we made gingerbread waffles.

Oh.my.goodness!

They were amazing.  Marshall said they were the best waffles he's ever tasted, and that's saying a lot since we eat them regularly.  I think they would make a perfect Christmas morning breakfast!


Gingerbread Waffles

1 3/4 C flour
2 T sugar
1 T baking powder
1/4 t salt
2 t ginger
3/4 t cinnamon
1/2 t cloves
2 eggs
1 1/2 C milk
1/2 C cooking oil or melted butter
1/4 C molasses
1 t vanilla

Step 1: In a medium bowl stir together flour, sugar, baking powder, salt, ginger, cinnamon, and cloves.  Make a well in the center of flour mixture; set aside.

Step 2: In another medium bowl, beat eggs slightly; stir in milk, oil, and vanilla.  Add egg mixture all at once to flour mixture.  Stir just until moistened (batter should be slightly lumpy).

Step 3: Bake waffles according to your specific waffle maker.
